Spiced Apple Chutney

Those of you on Twitter may already know that a few nights ago, a friend of mine called to see me with a rather large sack of cooking apples that she’d gathered on her farm.  When she told me she had some apples for me, I had only expected a carrier bag full and was intending on making an Apple Tarts or an Apple Crumble so you can imagine how surprised I was to see her come in the door with a 10kg potato sack full!

That made me think then, that I couldn’t just make Apple Tarts with so many apples so I set about looking for something else to do with them.  I received some great suggestions from the Irish Foodies on twitter, which I will be trying out over the next couple of days, but the first thing I wanted to try was a Chutney. Back to the Olden Days… Boxty

Last week, my daughter did a project for school based on “The Olden Days”.  Part of the project involved interviewing her grandparents about life when they were children, what their houses were like, about their schools and Christmas time.

We went looking through Nanny and Grandad’s old photo albums for photographs of when they were younger, which we copied and stuck into the project.  We also put in a picture of an old recipe book (which we still use today and I will write a post on sometime in the future).  While we were doing all this one night last week, we had the brain wave that we would ask my Mum to help us make Boxty and we’d photograph it then stick the recipe and pictures into the project as well to show a recipe that my Grandmother made from time to time when her own children were small.  Her children loved Boxty so much that they continued to make it themselves when they had families of their own, and now some of the Grandchildren make it too.  So it’s something that’s been passed all the way down the line of our family. Mammy? Can we keep him?

Like most kids, mine would love a pet.

So you can imagine their reaction when we visited the grandparents last month (Note: We do visit more than monthy – It’s just taken a while for me to get round to posting!).  They don’t have pets either, but as the kids were sitting in the kitchen, Child #1 opened the back door to go play outside then let out a scream and banged the door closed.  Of course we all wanted to know what was wrong so we (slowly) opened the door again.

Beer Butt Chicken

I first came across this recipe last year when I overheard a conversation in the local pub with some people who had just returned from a trip to America.  I thought it sounded really unusual and thought they must be making it up!  Not long after though, I bought Jamie Oliver’s book “Jamie’s America” and there it was again, I had a quick look at the list of ingredients, spotted that I had everything in so said I’d give it a go.  Continue reading
